Nothing says effortless entertaining like a plate of perfectly seasoned shrimp bites. These crispy crostinis deliver bright lemon notes and fragrant garlic, making them an ideal starter for any gathering.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup crusty baguette slices
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine (like Pinot Grigio)
  • Juice of 1 lemon
  • 1 tsp red pepper flakes
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly brush the crusty baguette slices with olive oil and arrange on a baking sheet. Bake for 8-10 minutes until lightly toasted and crisp, setting aside.
  2. While the bread bakes, season the shrimp generously with salt and black pepper.
  3. In a large skillet over medium heat, add the remaining 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant (do not let the garlic brown).
  4. Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer and reduce slightly for 2 minutes.
  5. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until they are pink and opaque. Remove from heat immediately.
  6. Stir in the fresh lemon juice. Taste and adjust seasoning if needed, ensuring all the shrimp are coated in the flavorful sauce.
  7. To serve, spoon a mixture of the garlic lemon shrimp over the toasted crostini slices. Garnish generously with fresh parsley.
